This is a fantastic cookie mix base that can be altered to make about a zillion different cookies. This mix is perfect for cookie parties or exchanges, as you just need to make a couple additions and you'll end up with a wide variety! This is a clone of the pouch mix that comes from your Aunt Betty C.
You will need:
5 cups All Purpose Flour
5 3/4 cups Granulated Sugar
2 TBSP Baking Powder
2 tsp Salt
1 1/2 C + 2 TBSP Butter or Margarine (3 1/4 sticks)
Measure the flour and pour it into a large bowl. Remember, to measure flour, you spoon it in to the measuring cup and level it off with a knife.
Add the sugar, baking powder, and salt to the flour and mix thoroughly. Add the butter and cut it in with a pastry cutter, fork, or your clean hands (my favorite option!) until it resembles coarse cornmeal or a fine streusel topping.
Store it in the fridge or freezer in an airtight container. Most of my cookies take 2 cups of mix, so I go ahead and package the mix into 2-cup containers or quart bags. Then, when I'm ready to bake, I just grab a container and go!
Yields about 10 cups
Helpful hints: Don't use lowfat margarine, soft margarine, or whipped margarine. I prefer butter, but when doing a cookie swap, I sub margarine.
